Recipe: PB&J Sushi

Sometimes we go weeks of just eating peanut butter and jelly every day. I try to mix it up by cutting it into squares, rectangles or even triangles. My kids love it that much! I started using this fun recipe to make it even more exciting. You don’t have to limit yourself to just PB&J though, it works with meats and cheeses. Tip: use a condiment to keep it rolled up and together.

PB&J Sushi

Ingredients : Bread, Peanut Butter, Jelly

Preparation:

First, take a slice of bread and cut off the crust.

Use a glass or rolling pin to flatten bread.

PB&J  roll bread

Spread on as much peanut butter and jelly as you like! You can also use chocolate or marshmallow spread or add items like bananas.

Roll up the bread.

They can eat it as a big roll, or you cut it into smaller pieces. The kids LOVE these, so be prepared to make a bunch!

Fun Summer Crafts for Kids

Giant Chocolate Chip Cookie Cake Recipe

One of our go-to desserts for celebrating special occasions is my Giant Chocolate Chip Cookie Cake. This is a great dessert that you can decorate or leave undecorated. I personally like to use store-bought frosting to decorate it. I typically use one can of white frosting and one of chocolate frosting. Use your imagination to bring this cookie to life!

Ingredients

  • 1 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups semisweet chocolate chips
  • Shortening or baking spray
  • Frosting

Instructions

Heat oven to 375 degrees F. Grease a 14-inch round deep dish pizza pan with shortening or baking spray.

Beat butter, granulated sugar, brown sugar, and vanilla until light and fluffy in a large bowl. Add eggs, one at a time. Gradually add flour, salt, and baking soda and beat until well blended. Then add chocolate chips.

Put batter in greased pan and bake at 375 degrees F for 20-25 minutes. Cool completely in pan on a cooling rack. Decorate with frosting.

Making Summer Memories

Summer is flying by way too fast! We’ve barely crossed some of our favorite things off of our summer bucket list, like going to the pool, visiting the zoo, and taking a vacation! That is what summer is all about to us – making memories.

One of my favorite summer memories is the local kite festival. We would always pack a picnic lunch and our favorite kites. They would have kite demonstrations and everyone, amateurs and professionals alike, would launch their kites at the same time! What a sight…it was just a good family event. The first year we went my youngest was only a couple weeks old so it was fun to see him grow older each year and to watch my oldest learn how to fly his own kite.

Some of my other favorite memories include:

  • Strawberry picking
  • Just watching the boys chat on the patio
  • Family basketball H-O-R-S-E tournaments
  • Sitting by the fire making s’mores

That’s the thing about summer…memories can be made in the simplest of moments.

Everyday Homemaking Hacks

I am a huge fan of things that make my life easier. In my home there are things I have adapted that I would love to share with you.

My charging cord doesn’t quite reach the corner of my couch, and my iPhone is always running out of battery when I sit down to relax for the evening. I use one of these hooks to keep my cord easy to grab when it is needed.

With two boys, there is always a need for a garbage can in our van. I took a simple cereal container and velcroed it to our center console. It easy to reach so we don’t have garbage all over the car.

Our school collects labels, box tops, and milk caps. An easy way to collect them is by taping a sandwich bag inside the cabinet. It’s easy to store away and out of plain sight, and I always know where they are.

We cannot have enough of these in our home. They collect my papers, photos, the boys stuff and more.

We recently remodeled our house and barely had to pound a nail in the wall because we hung all of our pictures with sticky velcro. It is easy to remove for dusting or changing of the photos, but is securely fastened to the wall.

Texas Caviar Recipe

During the summer I love to use fresh ingredients to make our food. One of my family’ go-to summer favorites is Texas Caviar.  We use this with our favorite tortilla chips or eat it as a side dish. This also keeps in the fridge for several days!

Ingredients
  • 2 small jalapeños
  • 1 cup chopped peppers (any mix of colors)
  • ¼ cup red onion
  • 1 can of black beans and 1 can of another type of bean (or 2 cans of black)
  • 1 can of corn
  • 1 chopped tomato
  • 2 cloves of garlic, chopped
  • ¼ cup of chopped celery
  • ¼ cup of chopped cilantro
  • ¼ jar of italian dressing (your favorite)

Instructions
  1. Chop up everything and put in a bowl. Mix in Italian dressing and let sit a minimum of 2 hours in fridge. Add cilantro at end and mix in.
  2. Serve with tortilla chips or as a salad.

Why I Love the 4th of July

The 4th of July has always been my favorite holiday. When I was a kid, I woke up early and sang songs like the Star Spangled Banner and This Land Is Your Land at the top of my lungs.  I would unroll the family flag and my sister and I would have a flag ceremony where we would march from the back door to the front flag stand. We would hang the flag and then say the pledge of allegiance.

Here are some of the reasons I love the 4th of July…..

  • the colors – red, white and blue
  • parades
  • patriotic music played by bands
  • kids waving flags
  • decorated bikes and strollers
  • pinnacle of summer
  • barbecuing
  • s’more brownies
  • fireworks
  • lawn games
